Red Peppers – Rich in vitamin C.  Great on a toast or tortilla also !

∙ Serves 6
Ingredients
  • 5 red peppers (pick them dark red)
  • 4 garlic cloves
  • 1 spoon of carvi and coriander (if you have it)
  • 1 cup of extra virgin olive oil
  • salt and pepper
Wash your red peppers.
Place in oven and bake at 350 degrees Fahrenheit for 1 hour.
Check and turn peppers every once in a while.
Let cool in the oven.
Remove skin and seeds.
Cut in small pieces.
Add olive oil, garlic, spices, salt and pepper.
Refrigerate or serve cold.
(you can freeze also)

Rouz jerbi (Medley steamed rice)

Super easy and healthy !

∙ Serves 6
Ingredients
  • 300 grams of calamari or chicken or meat
  • 300 gr or 1 1/2 cup of rice
  • 500 gr or 2 cups of spinach
  • 1 bunch of coriander
  • 1 bunch of parsley
  • 2 carrots, diced
  • 1 potato, diced
  • sweet peas
  • 1 cup of chick peas (if cooked add at the end)
  • 2 medium white onions
  • 5 garlic cloves
  • 2 spoons of tomato paste
  • 150 ml or 1/2 cup of olive oil
  • 1 1/2 spoon of powdered coriander
  • 1 spoon of dried mint
  • 1 1/2 spoon of paprika
  • 1 spoon of Harissa or 1 small hot pepper or pepper flakes
  • 1 spoon of curcuma
  • salt and pepper

    Mix all of the ingredients together and steam for 30 minutes.
